Ross Lewis is an Irish Michelin star winning head chef and co-owner of the restaurant Chapter One in Parnell Square , Dublin, Ireland.
Lewis grew up on a farm and went on to study Dairy Science at University College Cork. He discovered cooking as a living while working on a student visa in the United States. He later went to London to learn the trade of a chef. Where he worked at the restaurant Odin's, owned by Peter Langan. From there he went on to Dolphin Brasserie as junior manager and to Le Chat Botté Restaurant at the Beau Rivage Hotel in Geneva, Switzerland. He came back to Ireland in 1990 and went on to
open Chapter One restaurant in 1993. From its humble and sometimes challenging beginnings, on Dublin’s Northside, it has grown to attract accolades from a Michelin star to the respect of the international culinary community.
In 2011, Ross was honoured to be asked to create the menu and lead the kitchen team at the State banquet held at Dublin Castle for Queen Elizabeth the II’s historic visit to Ireland.
The dinner was hosted by President Mary McAleese and guests included An Taoiseach, Enda Kenny, British Prime minister David Cameron as well as people from the world of the arts and sport. Ross created a menu that represented Ireland selecting a number of small and artisan suppliers to showcase the best of Irish food and produce.
Ross has been inspired to create menus, which have placed Chapter One as a beacon of our native produce, and has helped him create a uniquely Irish cooking style.
